Gluten-Free Apple Coconut Yogurt Muffins
Probably one of my favourite times of the year, Autumn Season!
The change of weather into a crisper feel, the leaves of the trees changing colours, wildlife running around the yards collecting nuts, and, the bounty of new fruits & veggies.
This is what these muffins represent, in all honesty. Apples, cinnamon, lightness, and a tridoshic balance.
I decided to go vegan on this recipe - no eggs and a coconut yogurt. Have you ever tried Yoggu before?
These are gluten-free, dairy-free, and vegan.
Gluten-Free Apple Coconut Yogurt Muffins
Ingredients:
2 c oat flour
1/2 c coconut sugar
3 tsp baking powder
1/2 tsp sea salt
1/4 tsp cinnamon, ground
1 c yoggu, unsweetened
1 flax egg*
1/4 c olive oil
2 tbsp oat milk
1 apple, peeled & chopped
optional:
1/3 c roasted carob chips
Directions:
1. Preheat oven at 400F degrees and combine all dry ingredients into a bowl.
2. In a large bowl, combine all wet ingredients.
3. Stir in dry ingredients into wet ingredients until all blended together.
4. Add in the apple and, if using, carob chips.
5. Lightly grease muffin tin.
6. Fill tin with batter - batter will be thick.
7. Place in oven for 24 minutes or until fork comes out clean.
8. Let cool for 5 minutes.
The result will be a crumbly and light muffin. Great to enjoy with an afternoon tea.

*To make the flax egg, place 1 tablespoon of ground flaxseed into a bowl and add 3 tablespoons of water. Let sit for 15 mins in fridge. The result will be an egg-like consistency.
