What’s green, green, and green all over?

This cucumber, avocado, lime salad. That’s what!

I’m officially calling it a new obsession for summer.

The weather here in the NorthWest has been hot and sunny. Which is great since these kind of days are limited over here.

Usually, when the weather gets warmer, I tend to crave fresher, raw foods and juicier drinks.

Imagine lemonades, cucumber-infused water, or blueberry-infused water, cold noodles, and salads.

Maybe a taco or two 

So when I came across this little number, I had to share it with you all!

It was first introduced to me by my sister – and I love her for it.

You can probably walk over to your kitchen and make it right now since the ingredients needed are of everyday consumption.

Cucumber, Avocado, Lime Side Salad

Ingredients:

2 mini cucumbers
1 avocado
1/2 lime
pinch of sea salt

Directions:

Wash cucumbers and chop them up. Cut up your avocado and remove the pit. Drizzle the juice of half a lime. Sprinkle sea salt to taste. Combine all ingredients together.

This is SO good!

As a side salad or snack, it’s perfect. But as a meal, you may want to include some grilled chicken or chickpeas or some other type of protein to make it filling and more complete.
